Tiramisu is a traditional Italian dessert, but this keto version brings a fresh twist with strawberries while keeping it low-carb. With layers of almond flour ladyfingers, mascarpone cream, and strawberries, this dessert is both decadent and keto-friendly.

Ingredients:

For the Ladyfingers:

  • 1 ½ cups almond flour
  • ½ cup granulated erythritol or another keto-friendly sweetener
  • 1 teaspoon baking powder
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened almond milk

For the Mascarpone Cream:

  • 16 ounces mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup powdered erythritol or another keto-friendly sweetener

  • 2 cups fresh strawberries, sliced
  • 2 tablespoons granulated erythritol or another keto-friendly sweetener

  • Fresh mint leaves, optional

Instructions:

1. Prepare the Ladyfingers:

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium mixing bowl, whisk together the almond flour, granulated erythritol, and baking powder.
  • In another bowl, beat the eggs and vanilla extract until light and fluffy.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the unsweetened almond milk, and mix until smooth.
  • Transfer the batter to a piping bag and pipe 3-inch long strips onto the prepared baking sheet.

  • In a 9×9 inch baking dish, place a layer of the cooled ladyfingers.
  • Spoon half of the mascarpone cream over the ladyfingers, spreading it evenly.
  • Add a layer of the macerated strawberries, spreading them evenly over the cream.
  • Repeat with another layer of ladyfingers, the remaining mascarpone cream, and strawberries.

5. Chill the Tiramisu:

  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.

6. Serve:

  • Before serving, dust the top of the tiramisu with unsweetened cocoa powder.
